Fiesta-Ready Taco Bar

 

Planning ahead for Cinco de Mayo?

A taco bar is the easiest way to bring people together. Set everything out, keep it simple, and let everyone build their own.

This version leans fresh and full of flavor with grilled chicken, quick pico, and simple guac.


You’ll need (serves 4–6):

For the chicken
• 1.5 lbs chicken thighs or breasts
• 2 tbsp olive oil
• 1 tsp chili powder
• 1 tsp cumin
• ½ tsp smoked paprika
• 2 cloves garlic, minced
• Juice of 1 lime
• Salt and pepper

For the guac
• 3 ripe avocados (Mito’s Pick)
• 1 lime
• 2 tbsp chopped cilantro
• Salt

For the pico de gallo
• 3 tomatoes, diced
• ¼ onion, finely chopped
• 1–2 tbsp cilantro
• Juice of 1 lime
• Salt


How to make it:

  1. Marinate the chicken OR YOUR FAVORITE PROTEIN: Mix olive oil, spices, garlic, lime juice, salt, and pepper. Toss with chicken and let sit for at least 20 minutes.

  2. Cook the PROTEIN: Grill or sauté until cooked through and lightly charred. Let rest, then slice.

  3. Make the guac: Mash avocados with lime juice, cilantro, and salt. Keep it chunky.

  4. Mix the pico: Combine tomatoes, onion, cilantro, lime juice, and salt. Let sit while everything else finishes.

  5. Warm the tortillas: Heat in a pan or directly over a flame until soft and slightly charred.

  6. Build your tacos: Chicken, guac, pico, and whatever extras you like.


Set it all out and you’re ready for Cinco de Mayo.
