Mediterranean Grilled Veggie Bowl

This Mediterranean grilled veggie bowl is everything we love this time of year, fresh, colorful, and full of flavor. It’s the kind of meal that starts with great produce and comes together effortlessly.
You’ll need (serves 2–3):
• 1 zucchini, sliced lengthwise
• 1 eggplant, sliced into rounds
• 1 red bell pepper, halved and seeded
• 1 small red onion, sliced
• 1 cup cooked quinoa or grain of choice
• ½ cup beet hummus (or your favorite hummus)
• ¼ cup crumbled feta
• Fresh herbs (mint or parsley)
• Olive oil
• Lemon
• Salt & pepper
How to make it:
1) Toss vegetables with olive oil, salt, and pepper
2) Grill over medium-high heat until tender and slightly charred (about 3–5 minutes per side)
3) Cook quinoa according to package instructions
4) Assemble bowls with quinoa, grilled veggies, and a generous scoop of hummus
5) Top with feta, fresh herbs, and a squeeze of lemon
