Ingredients
1 bunch fresh asparagus, trimmed and cut into 1-inch pieces
8 farm eggs
½ cup milk
3 oz goat cheese, crumbled
2 tbsp olive oil
1 small shallot, diced
Salt & pepper to taste
Fresh parsley or chives for garnish
Instructions
Preheat oven to 375°F.
Heat olive oil in an oven-safe skillet over medium heat. Add shallot and asparagus and sauté until just tender, about 4–5 minutes.
In a bowl, whisk together eggs, milk, salt, and pepper until fully combined.
Pour egg mixture into the skillet over the vegetables. Sprinkle goat cheese evenly throughout.
Cook on the stovetop for 2–3 minutes until the edges begin to set.
Transfer skillet to the oven and bake for 10–12 minutes, or until the center is fully set and lightly golden.
Top with fresh herbs and serve warm.
