Grilled Salmon with Cherry Citrus Salsa

Indulge in a heart-healthy grilled salmon recipe, a dish that marries the rich, omega-3 packed flavours of salmon with the sweet and tangy burst of fresh cherries, japañeno, lime, and fresh herbs.


Ingredients

  • 4 portions Alaska pink salmon fillets (approximately 4-6 ounces each)

  • ¼ cup olive oil, divided use

  • 2 cups cherries, halved and pits removed

  • 1 bunch fresh cilantro, stems trimmed and then chopped into 1” pieces

  • 1 jalapeno, sliced very thin on the bias

  • 1 lime, juiced

  • Salt & pepper to taste


Instructions

1. Rub 2 tablespoons of olive oil on the salmon fillets, then season with salt, pepper, and lime juice.

2. Grill or broil pink salmon fillets until just cooked through (approximately 5-7 minutes per inch of thickness).

3. While the fish cooks, remove the seeds from the cherries by pressing down on the cherry with the flat side of a knife; the seed will come loose. Remove the pit. Then cut each cherry into quarters.

4. Combine cherries, cilantro, jalapeno, remaining 2 tablespoons olive oil, lime juice, and season with salt & pepper.

5. Remove from heat and serve with salsa, allowing the heat of the fish to gently warm the salsa.

6. Finish with fresh cilantro and an extra squeeze of lime before serving.


Serving Suggestion

Serve alongside mashed potatoes, roasted fresh vegetables, or a crisp local greens salad for the perfect spring meal.
