Serves 4
Prep: 15 minutes
Cook: 35–40 minutes
Ingredients
4 bone-in, skin-on chicken thighs (or 4 boneless chicken breasts)
2 medium sweet potatoes, peeled and cut into 1-inch cubes
2 apples, cored and cut into wedges
1 small red onion, cut into wedges
3 tablespoons olive oil
1 tablespoon pure maple syrup
1 teaspoon dried thyme
1 teaspoon garlic powder
½ teaspoon paprika
Salt and freshly ground black pepper, to taste
Fresh parsley, optional
Mixed greens, for serving
Instructions
Preheat oven to 425°F. Line a large sheet pan with parchment paper or foil for easy cleanup.
In a large bowl, toss sweet potatoes and red onion with 2 tablespoons olive oil, thyme, garlic powder, paprika, salt, and pepper. Spread evenly across the sheet pan and roast for 10 minutes.
Pat chicken dry and season with salt and pepper. Nestle the chicken among the sweet potatoes and roast for another 15 minutes.
Toss apple wedges with the remaining olive oil and maple syrup. Add them to the sheet pan and roast for another 15–20 minutes, until the sweet potatoes are tender, the apples are golden, and the chicken reaches an internal temperature of 165°F.
Sprinkle with fresh parsley, if desired. Serve warm alongside a simple green salad and crusty bread.
A LITTLE SOMETHING EXTRA
A drizzle of maple syrup brings out the natural sweetness of the apples and sweet potatoes, while savory herbs keep everything balanced. It's a comforting, no-fuss dinner that leaves more time for Halloween festivities!
