Grilled Santa Maria Tri-Tip with Summer Corn & Tomato Salad
Nothing Says California Summer Like Tri-Tip on the Grill
Few meals capture the spirit of a Santa Barbara summer better than a perfectly grilled Santa Maria tri-tip served alongside a fresh salad made with sweet local corn and ripe tomatoes. It's simple, seasonal, and packed with the incredible flavors that make local produce shine.

Ingredients
For the Tri-Tip
2–3 lb tri-tip roast
Santa Maria seasoning (salt, black pepper, and garlic)
For the Summer Corn & Tomato Salad
4 ears fresh sweet corn
2 lbs local tomatoes, chopped
¼ cup fresh basil, torn
¼ cup red onion, finely diced
Juice of 1 lemon
3 tablespoons extra virgin olive oil
Salt and freshly ground black pepper, to taste
Directions
Preheat your grill to medium-high heat.
Season the tri-tip generously on all sides with Santa Maria seasoning.
Grill the tri-tip to your preferred doneness, turning occasionally for an even sear. Remove from the grill and let rest for 10–15 minutes before slicing against the grain.
While the meat rests, grill the corn until lightly charred on all sides. Let cool slightly, then slice the kernels from the cob.
In a large bowl, combine the grilled corn, chopped tomatoes, basil, red onion, lemon juice, olive oil, salt, and pepper. Toss gently until evenly coated.
Slice the tri-tip and serve with a generous helping of the fresh summer salad.
