Grilled Peach & Feta Salad

Ingredients

  • 4 ripe peaches, halved and pitted

  • feta cheese

  • ¼ cup fresh basil leaves

  • 2 tablespoons extra virgin olive oil

  • 2 tablespoons balsamic glaze

  • Flaky sea salt

  • Freshly cracked black pepper

Optional

  • 2 grilled chicken breasts, sliced

  • Crusty artisan bread for serving


Directions

  1. Preheat a grill or grill pan to medium-high heat.

  2. Lightly brush the peaches with olive oil.

  3. Grill peaches cut-side down for 2–3 minutes, then flip and cook another 1–2 minutes until lightly caramelized.

  4. Arrange the grilled peaches on a serving platter.

  5. Add feta.

  6. If desired, top with sliced grilled chicken for added protein.

  7. Scatter fresh basil over the salad.

  8. Drizzle with olive oil and balsamic glaze, then season with flaky sea salt and freshly cracked black pepper.

  9. Serve immediately with warm crusty bread, if desired.


Fresh Tip

Choose peaches that are ripe but still slightly firm. They'll hold up beautifully on the grill while developing a delicious caramelized flavor.
