Fiesta Chicken Fajita Bowls

Ingredients
For the Chicken
1½ lbs boneless, skinless chicken breasts, cut into bite-sized pieces
2 tbsp olive oil
2 tsp chili powder
1 tsp smoked paprika
1 tsp ground cumin
½ tsp garlic powder
½ tsp onion powder
½ tsp oregano
Salt and freshly ground black pepper, to taste
Juice of ½ lime
For the Cilantro-Lime Rice
2 cups cooked white rice
2 tbsp chopped fresh cilantro
Juice of 1 lime
2 green onions, sliced
Pinch of salt
Bowl Toppings
1 cup fresh corn
1 cup canned red kidney or pinto beans, rinsed and drained
1½ cups pico de gallo
1½ cups shredded Monterey Jack or Mexican blend cheese
½ cup sour cream
2 green onions, sliced
Extra chopped cilantro
Lime wedges, for serving
Instructions
1. Season the Chicken
In a large bowl, toss the chicken with olive oil, chili powder, smoked paprika, cumin, garlic powder, onion powder, oregano, salt, pepper, and lime juice until evenly coated.
2. Cook the Chicken
Heat a large skillet over medium-high heat. Cook the chicken for 6–8 minutes, stirring occasionally, until browned and cooked through. Remove from heat.
3. Prepare the Rice
Mix the cooked rice with cilantro, lime juice, sliced green onions, and a pinch of salt.
4. Assemble the Bowls
Divide the cilantro-lime rice among four bowls. Arrange the chicken, corn, beans, and pico de gallo in sections around the bowl. Sprinkle generously with shredded cheese, then add a dollop of sour cream in the center. Garnish with additional green onions and cilantro.
5. Serve
Serve immediately with fresh lime wedges. Stir everything together before enjoying each flavorful bite.
